does water cooling add general overall stability compared to air?

if its not overheating with air, and its stable with air, watercooling will just make it colder and quiter

u think ide need to still have my 80 mm exhaust fan if i had water cooling? I think that is considerably adding to my overall system noise

Not necessarily quieter, the PC I've just built is just as loud as my older one which is cooled by air because I'm using high airflow fans. I've limited the voltage to 7 volts to slow them down and doing that actually makes my temps rise by about 5c. You can get quieter fans like Papst but then they're not going to move as much air, so your temps will be a little higher. But I'm not really bothered how loud my PC is anyway.

i wouldnt even think about water unless it is good brand. from what i have learned, DO NOT get non-branded water, otherwise your computer will be competing for first spot with the Sun for "The Highest Temperature Award"

Couldn't you just make a case mod and have a 120mm fan in the back. I've been thinking of doing it. Its quieter and has greater airflow.

That would be an equal comparison to those two kits. You can't beat the performance of a high flow setup.
Check out www.dangerden.com and www.d-tek.com for some great products.
