I was wondering how much of an affect does the PSU really have on cooling the processor. Does it really matter if your PS has a fan or intake on the bottom of it as opposed to the side? Also does it really matter if a PSU only has a fan on the bottom of it and not an exhaust fan in the back? Any help would be greatly appreciated!

PSU does matter on cooling CPU. If the heat produced by PSU remains traped in case with no fan to exhaust it, CPU temps will certainly rise. As important as cool airflow going in is hot airflow going out.
