Yeah, that BIOS utility is pretty much non-functional. The only way I have found to get RAID working on my 785G motherboards is using RAIDXpert from within Windows.
You can install Windows to a single drive as AHCI. Then replace the Microsoft AHCI driver with the AMD AHCI driver. Finally, switch the BIOS from AHCI mode to RAID.
RAIDXpert will show the drive as a single drive. You could then take two other drives and mirror them.
