are standard patch cables (CAT5e) water resistant? are they ok to be used outdoors?

Yes. They might be good enough, but they won't hold up as well as cable designed for outdoor use. Running it in a conduit and buried will also help protect it. Stay clear of power lines.

just make sure that the ends have water covering/sealed, you know what i mean. that way, they will not get water in them. although they might still get condenstaion in the cover's?, and don't let a rat chew through them

Make sure you get STP (shielded twisted pair) CAT5e cables, not the typical UTP (unshielded twisted pair) cabling because STP cabling has better insulation for all the wires in the cable than UTP does.

Might be good to think on how temperature difference can degrade plastic covering or whatever kind of shielding you have when it is not made for outdoor in the first place. Normal winter with cold air/earth or hot sunlight exposure can also create problem where the coating breaks after some time.
