Hello,

I'm thinking on upgrading my system. I'm thinking of buying the radeon 7850 1Gb. Will the gpu bottleneck with my A10-5800k APU?

No the A10 should do alright with single 7850.

Hmmm, that's interesting ,I saw the A10 comparing to something like Intel i3.

Does anyone know if 1Gb of video memory is enough to play at 1920x1080 resolutions?

1GB is fine for 1920x1080, but it will bog down slightly if you throw heavy AA at it, but at 4x box AA it won't be enough to be noticeable, especially since many games are CPU bound these days it seems.
