Hi, I have an AMD Raedon HD 6950 (2GB) and I would like to know if i could get the same resolution using DVI or HDMI. Ex: I have got a monitor with a max resolution of 1920x1080: will I be able to get FULLHD using DVI?

The thing is that I want to plug 2 monitors and my video card just have 1 HDMI and 2 DVI (I'm not using DP).

On another hand, Is there any difference between 1920x1080 and 1600x900? I know the second one isn't FULL HD but that's the only difference? Is it there any major difference? or anything?

You will be able to get much more than 1920x1080 over DVI, up to 2560x1600 if your monitor supports it.

320 horizontal pixels and 180 vertical pixels. Other than that, they're both 16 : 9 resolutions, and with the price of 1920x1080 panels these days, there is no reason to bother with 1600x900.
