I am looking to run three dispalys on W7 and have a Radon 5850 1 GB Saphire already. What is an inexpensive board that is compatiable with my current board which will allow a third monitor? The monitors will all be independant.

You don't need another card for 3 monitors, tell us exactly what model of 5850 you have , it most likely will take a displayport active adapter you can use for a third monitor.

It's a HD 5850 1G GDDR5 PCI-E Dual DVI/HDMI/DP Sapphire. Will I be able to have three diffrent screens going with the adaptor, not the same thing spread across three screens?

Yep,just make sure to get an active display port adapter.

plug 2 monitors in the DVI and another in the DP with the adapter.

yes AMD refers to 3 screens as eyefinity weather or not you are running in extended mode (seperate screens) or 1 large display . (like mine although i have hot keys to switch back and forth between extended , and Single large display) 

Just be sure to pick up a Displayport to DVI active adapter , and you'll be good to go.

An active displayport to DVI adapter. XFX, Sapphire , and a few others make them. Doens't matter who you get it from. There all the same.

You might want to look at something like the HD 5450 though. It's cheaper than an active adapter, and having a separate card does have its advantages.
