Windows 8.1 64 bit

My screen resolution keeps automatically changing to Generic PnP monitor. No rhyme or reason why. If I select "detect" then is will go back to our monitor settings (Dell S2340M(Analog) 1920x1080

Motherboard or System Make & Model
ASUS Desktop PC CM1745 Series

Power Supply

I don't know

Display Device(s) and Connection(s) Used
 Dell S2340M(Analog) serial cable(?)

Applications and Games

Anytime we use the computer. Firefox, Chrome, IE...the monitor will suddenly just change resolution.

CPU Details
AMD A8-5500 APU

Motherboard BIOS Version
I don't know

System Memory Type & Amount
8GB

Additional Hardware
Seagate 1T external drive

Additional Details
This has only begun once we updated to Windows 8.1. We were fine before hand, and I don't believe we are now able to roll back to Windows 8.0. It is just terribly annoying to be working on a Photoshop project or a video project and suddenly the screen resolution changes. I downloaded the beta driver from your for my graphics card, but the problem still persists. I'm hoping that somebody can point me in the right direction. Thanks.

The Dell driver page for your monitor is here:

http://www.dell.com/support/drivers/us/en/19/Product/dell-s2340m

Open the "Drivers For OS Deployment" section at the bottom of the page.  It looks like the driver with the release date of 11/8/2013 is the one you want since Windows 8.1 is listed in the supported operating systems.  Try installing this driver and see if it fixes your problem.

I have updated to the latest monitor driver, and updated to the latest video card driver...and the issue still persists. I can't believe that I am the only one who is suffering from this issue.

Did you use the device manger to manually select the new driver for the monitor?  If you did and that still didn't fix the problem, then it sounds like the OS got messed up during the upgrade from Windows 8 to 8.1.  You probably should consider re-installing the OS from scratch.  That's all I can come up with.
