I couldn't find it.

 

Is it possible to enter desired angles of peripheral display (in relation to my face) and thus get the correct projection?

 

It seems like current way is flawless only for flat Eyefinity setups.

I can tell you what Google told me. There is no such setting apart from the ability to phisically move the monitors, which shouldn't be an issue.

There are tutorials though, which help calculating the proper angle (which is not necessarily flat).

If projection is still rectilinear, there is no reason for me to rotate my displays.

Who said that? If projection is rectilinear (it obviously is), GPU renders scene as if they are projected onto flat surface. If you keep displays parallel - everything will be fine (assuming in-game FOV matches real-life FOV).

 

Keep rectilinear projection, rotate displays and you get unrealistic distortions.

 

Some racing simulators have the option to enter the angle of satellite displays. They then render separate views for each display. Honestly, this should be supported by AMD.
